Baguette and Berries
Remove rind from brie and cut into 1/2 inch cubes. In bowl stir together brie and orange marmalade; fold in raspberries and pecans. Slice bread in half horizontally. Hollow out bottom half, leaving 3/4-inch shell. Spread brie mixture on bottom half. Top with enough salad greens to cover brie and fill inside of sandwich. Replace top bread; secure with toothpicks. Cut into individual servings.

Place avocado, mayonnaise, vinegar and cayenne in food processor or blender. Puree until smooth. Season to taste with salt and pepper.
Cooking Directions For Panini:
Brush all sides of bread with melted butter. Place 2 slices of cheese on each slice of bread. Add bacon, onions, tomato and lettuce to one side. Place other piece of bread on top, cheese side down. Grill sandwich on hot griddle or skillet until bread is browned on both sides and cheese is melted.
Cooking Directions For Yam:
Heat oil to cover fries in small skillet to 375°F. Fry yams until they are crispy, about 5 to 7 minutes. Drain, drying with paper towels; season with salt and pepper.
Spoon mayo into small serving dish or ramekin. Slice sandwich in half and place on plate with fries and mayo.
Brie Grilled Cheese With Honey
Mix cinnamon sugar with butter, set aside. Split English muffin and place nooks-and-crannies side down. Cover both halves with brie slices and press into muffin. Top one side with strawberries and drizzle with honey. Place other piece of English muffin on top, cheese-side down.
Spread half of cinnamon sugar butter into the nooks and crannies on one side. Heat a pan over medium heat. Place sandwich into heated pan, butter side down and brown 2-3 minutes. Butter remaining side of muffin and flip. Grill until golden brown and remove from heat. Let rest for a minute. Serve.
